This July Plant It Forward will be spotlighting one of our bountiful summer vegetables: the eggplant! The eggplant is one of the most diverse and widely used vegetables around the world! We would love for your cuisine to reflect the diversity and cultures it represents! Only one eggplant will be crowned victorious!
Goal: Enter a dish into the Country Fair Cook Off Competition which spotlights the eggplant!
